I love baking with kids, but I don't love recipes with dozens of steps and lots of ingredients. Any recipe with just three ingredients is my sort of baking activity!

- A can of pumpkin (I like Libbys pumpkin)
- Spice Cake mix
- Chocolate chips (or butterscotch chips)
These are great cookies to make with a large group of kids if you set up each kid with their own spatula, bowl (From the $$ store), and ingredients.
Make sure you open the cans with a can opener before you get started baking and before you have littles helping.
Easy Pumpkin Cookie Recipe
Start by mixing the can of pumpkin and the spice cake mix in a big bowl. Mix it until the batter look smooth and you can't see any powder.
Next, add in 1 cup of chocolate chips.
Then, get a cookie scoop out and scoop small balls of batter onto a baking sheet. I like to put my on a Silpat silicone baking sheet versus foil or a greased pan because it is so easy to clean up.
Bake at 350 F for 12-15 minutes depending on your oven and how cooked you want the cookies. I cook them for 12 minutes because that makes them pretty moist but they still stay together.
That was easy, right? I've already made them twice in the past week and I'm making them again this next week. They are eaten so quickly, because they are so delicious!
Want to change them a little bit? Put them in a muffin tin and make pumpkin muffins! I've heard those are great to make with this recipe.
